<li>3 cups all-purpose flour (or gluten-free flour &#8211; I used Namaste brand, which has xanthan gum )</li>



<li>½ cup granulated sugar</li>



<li>½ cup light brown sugar, packed</li>



<li>1 teaspoon baking powder</li>



<li>¼ teaspoon salt</li>



<li>½ teaspoon ground cinnamon</li>



<li>1 large egg</li>



<li>1 teaspoon vanilla extract</li>



<li>1 cup unsalted butter, chilled and cut into cubes (plant based for dairy-free)</li>
</ul>



<h3 class="wp-block-heading"><strong>For the Filling</strong></h3>



<ul class="wp-block-list">
<li>2 tablespoons cornstarch</li>



<li>½ cup granulated sugar</li>



<li>1 tablespoon lemon juice</li>



<li>4 cups fresh strawberries, sliced and chopped (or fresh blueberries)</li>
</ul>



<h2 class="wp-block-heading"><strong>How to Make Strawberry Crumb Bars</strong></h2>



<ol class="wp-block-list">
<li>Preheat your oven to 375°F and lightly coat a 9&#215;13-inch baking dish with cooking spray. I found the bars easy to remove, but for extra assurance, you can line the greased pan with parchment paper and give it another light spray.</li>



<li>In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, salt, and cinnamon.</li>

<li>Add the egg mixture and cold butter cubes to the dry ingredients. Using a fork, pastry cutter, or your hands, mix until the texture resembles coarse crumbs. <li>Let the bars cool for 20 to 30 minutes before cutting into squares. Store them in an airtight container in the fridge.
