I recently made a batch for my family using Namaste gluten-free flour and Country Crock plant-based butter, and they were a hit. What You’ll Need to Make Strawberry Crumb Bars

For the Crust & Topping

  • 3 cups all-purpose flour (or gluten-free flour – I used Namaste brand, which has xanthan gum )
  • ½ cup granulated sugar
  • ½ cup light brown sugar, packed
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup unsalted butter, chilled and cut into cubes (plant based for dairy-free)

For the Filling

  • 2 tablespoons cornstarch
  • ½ cup granulated sugar
  • 1 tablespoon lemon juice
  • 4 cups fresh strawberries, sliced and chopped (or fresh blueberries)

How to Make Strawberry Crumb Bars

  1. Preheat your oven to 375°F and lightly coat a 9×13-inch baking dish with cooking spray. I found the bars easy to remove, but for extra assurance, you can line the greased pan with parchment paper and give it another light spray.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, salt, and cinnamon.

  4. Add the egg mixture and cold butter cubes to the dry ingredients. Using a fork, pastry cutter, or your hands, mix until the texture resembles coarse crumbs.
