Dairy Free Gluten Free Peanut Butter Cookies

These gluten-free and dairy-free salted peanut butter cookies are made with simple ingredients and are sure to please everyone. The dough is easy to make and only requires 15 minutes of prep time. After chilling, the dough balls are scooped and baked until golden brown. Enjoy!

Ingredients
  

  • 2 cups packed light brown sugar
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 2 cups smooth peanut butter
  • coarse-grained sea salt, to finish

Method
 

  1. Preheat the oven to 350°F. Line a cookie sheet with parchment paper.
  2. In a medium bowl, vigorously whisk together the light brown sugar and eggs until incorporated.
  3. Whisk in the vanilla extract.
  4. Add the peanut butter and mix with a spatula until smooth and completely incorporated, and until no ribbons of peanut butter can be seen. You know the dough is ready when it has the consistency of Play-Doh.
  5. Chill dough for 15 minutes.
  6. Stir dough. Using a scoop (2 tablespoons – 44mm – scoop), scoop dough balls and place them on the prepared rimmed sheet pan.
  7. Sprinkle the dough balls lightly with coarse-grained sea salt just before baking.
  8. Bake for about 12-15 min, turning sheet pan once halfway through baking.
  9. Cookies should be just golden at edges. Try not to overbake.
