Ingredients
  

  • 1 lb ground turkey
  • 4 carrots, peeled and diced
  • 4 stalks celery, diced
  • 4 large yellow potatoes, peeled and diced
  • 1 yellow onion, diced
  • 1 cup lentils
  • 5 cups chicken broth
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried rosemary
  • ½ tsp dried thyme
  • 2 tbsp Dijon mustard (or yellow mustard)
  • tbsp soy sauce (use tamari for gluten-free)
  • salt and pepper to taste
  • Greek yogurt for garnish (optional, use dairy-free yogurt if needed)

Method
 

  1. Heat olive oil in a large soup pot over medium heat. Add onion, garlic, and ground turkey, breaking up the meat as it cooks.
  2. Once the turkey is partially cooked, add carrots, celery, and potatoes. Stir and let cook for a few minutes.
  3. Add lentils, rosemary, thyme, mustard, soy sauce, and chicken broth. Stir to combine.
  4. Turn heat to high and bring to a boil. Cover with a lid, reduce heat, and let simmer for 30 minutes, stirring occasionally.
  5. Season with salt and pepper to taste.
  6. Serve warm, topped with a dollop of plain Greek yogurt or a dairy-free alternative if needed. Enjoy!
