Ingredients for Snickerdoodle Bars
For the bars:
- ½ cup butter, softened
- ½ cup margarine or shortening ( or use 1 cup dairy-free butter it works great!)
- 1½ cups granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2¾ cups all-purpose flour
- 1½ teaspoons cream of tartar
- 1 teaspoon baking soda
- ½ teaspoon salt
For the cinnamon-sugar topping:
- ¼ cup granulated sugar
- 1 tablespoon ground cinnamon
How to Make Snickerdoodle Bars
- Preheat and prep.
Preheat your oven to 350°F (175°C). Lightly grease or line a 9×13-inch baking dish with parchment paper for easy removal. - Mix the dough.
In a large mixing bowl, cream together the butter, margarine, and sugar until light and fluffy. Add the eggs and vanilla and mix until combined. - Add dry ingredients.
Stir in the flour, cream of tartar, baking soda, and salt. Mix until just combined—don’t overmix. - Press into the pan.
Press the dough evenly into the prepared baking dish. - Add the topping.
In a small bowl, mix the ¼ cup sugar and cinnamon. Sprinkle evenly over the dough. - Bake.
Bake for 25–30 minutes, or until the edges are golden and the center is just set. Don’t overbake. Cool completely before cutting into bars.
Freezing Tip: Store in a freezer-safe container for up to 3 months. Just thaw and enjoy!
