  • 2 cups packed light brown sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 2 cups smooth peanut butter (regular peanut butter, not natural peanut butter, works best)
  • Coarse-grained sea salt, to finish (optional)

How to Make Dairy-Free Gluten-Free Peanut Butter Cookies

  1. Prep & Preheat
    In a medium bowl, vigorously whisk together the light brown sugar and eggs until fully combined. Whisk in the vanilla extract. Add the peanut butter and switch to a spatula, stirring until the mixture is smooth and no peanut butter streaks remain. The dough should be thick and uniform—similar in texture to Play-Doh when it’s ready.

  2. Chill the mixture
    Put the dough mixture in your refrigerator for 15 minutes. You can bake these cookies as soon as the dough is prepared, but they will retain their shape better if you chill the dough balls for 15 minutes before baking. 
  3. Form the cookies
    Stir the dough. Using a scoop (2 tablespoons – 44mm scoop), scoop dough balls and place them on the prepared rimmed sheet pan. If desired, sprinkle the dough balls lightly with coarse-grained sea salt just before baking. I often skip this step. Either way, these cookies are amazing.

  4. Bake
    Bake for about 12-15 minutes, turning the sheet pan once halfway through baking. Cookies should be just golden at the edges. Don’t overbake. Enjoy!
